Carrot Cake Smoothie Bowl

carrot_cake_smoothie_bowlsEaster is such a fun time! Spring has arrived, our windows are open, and we get to celebrate.

With all of the goodies the Easter bunny brings, we tend to overindulge a little on chocolate and sweets, but hey you've got to live a little, right?

Life is all about balance, so we've created this beautiful smoothie bowl to add a delicious Easter meal that is still nourishing your body and fun to create. 

Carrots, not just for the bunnies, are a great source of beta-carotene (which the body converts to Vitamin A) a wonderful source of soluble fibre, biotin, vitamin K, potassium and Vitamin B6.

Turmeric's active ingredient, curcumin has powerful anti-inflammatory effects and is a powerful antioxidant, plus it adds to the beautiful colour of this bowl. Add a pinch of black pepper to increase curcumin's bioavailability.

We love tossing in some Mighty Maca powder which adds clean plant-based protein, fibre, immune support and adaptogenic vibes.

What you need:

3 frozen bananas

1/2 cup frozen pineapple

1 cup plant milk

1-2 TBSP Mighty Maca powder

2-3 dates

1 large carrot chopped

handful of greens

small knob of turmeric root (1/4 tsp dried powdered root)

1/2 tsp cinnamon

1/4 tsp nutmeg

 

To Make:

Add ingredients into a high speed blender and combine. 

It should be pretty thick, so scoop into bowls and top with your favourite toppings. We love adding granola, sliced banana, fresh berries, coconut flakes or chopped nuts.
