Protein Snack Bars


I love starting the week with a fridge full of ready to eat snacks. These little bars are super quick to whip up on a Sunday, and full of good fat, protein and nutrients. 

Our Mighty Maca powder is a rich source of folate and important vitamins and minerals. Maca is a wonderful source of calcium, amino acids, iodine, iron & magnesium, but also boosts critical antioxidants in the body like glutathione, while containing gentle adaptogenic properties. That paired with reishi mushroom, make this one chilled out powder. Not only is reishi adaptogenic, but it also contains vitamins A, B, C, D & K, this gentle adaptogen has been coined "Mushroom of Immortality" in Traditional Chinese Medicine.

These bars a delicious healthy snack to have on hand, but they probably won't last long!

What you need:

  • 1 cup raw cashews
  • 1/4 cup pumpkin seeds
  • 1/4 cup Mighty Maca
  • 1/2 cup chia seeds
  • 12 dates
  • 1/2 cup Cacao Butter

To Make:

Melt the cacao butter in a small saucepan. Add cashews and pumpkin seeds into a food processor. Process until the nuts or ground into tiny pieces. Add in the dates and chia seeds. Process again. Add in Mighty Maca powder and melted cacao butter. Pulse until combined. 

Line a square baking dish with parchment paper. Press the mixture into the dish and let harden in the fridge for an hour or two. Once its hardened you can cut into bars and store in the fridge!
