Radical Berry Crumble

There aren't a lot things that smell better that a crumble baking in the oven. This easy to throw together crumble is full of protein, antioxidants and vitamin C. It makes for a delicious dessert or an easy breakfast, topped with a little coconut cream and fresh blueberries.

We use camu camu berry in our Berry Radical powder for a couple reasons. One, because its high vitamin C content. In fact, camu camu berry has more vitamin C than both acerola and acai berries, and is said to be natures highest whole food source of vitamin C. Two, camu camu is high in phytochemical, antioxidants and important minerals and amino acids which are all required for good health.

What you need:

  • 1 cup oats 5 tbsp GF flour
  • 1/4 cup coconut sugar 1/2 cup coconut oil (firm)
  • 1/2 tsp cinnamon

Filling:

  • 4 cups frozen blueberries
  • 3 tbsp Berry Radical powder
  • 2 tbsp maple syrup

To make:

Preheat the oven to 350. In a large bowl, combine oats, flour, sugar and cinnamon. Then add coconut oil and combine with your hands.

In a separate bowl mix frozen blueberries, Berry Radical powder and maple syrup. Add blueberry mixture into a small baking dish, top with oat mixture and bake for 45-50 minutes. You can enjoy this straight out of the oven, or reheat for breakfast time.
