Superfood Cookie Dough Bites
In my house, I'm all about making snacks for the whole family! I'm obsessed with balls because the kids love them, and its so easy to sneak in bonus superfood ingredients, making them extra nutritious.
My friend and Holistic Nutritionist, Diane from Insightful Bite created these delicious Superfood Cookie Dough Bites. Diane is a mom of two and knows the importance of nutrient dense snacks for our little ones.
What you need:
1 cup GF Rolled Oats
1/4 cup Mighty Maca Superfood Powder
1/2 cup almond flour
3 Tb. Peanut Butter or Almond Butter
2 Tb. coconut oil (soft/room temperature)
3 Tb. maple syrup
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
pinch of sea salt
Add oats to a food processor and blend until the oats have become a flour, about 1-2 minutes.
Add the superfood powder and almond flour and blitz again until combined.
Add remaining ingredients and process until everything is incorporated.
Scoop out about 2 teaspoons at a time and roll into balls.
Store in the fridge or freezer for a healthy and quick snack!
