Tahini Superfood Cookies

We love finding ways to bake delicious treats that satisfy that sweet tooth without all the yucky ingredients. Plus, it's a great activity to do with a toddler (if you've got the patience).

Tahini adds a dairy-free calcium boost to this recipe, making these a perfect treat for a new momma in your life, or anyone who enjoys a good cookie.

We're always looking for ways to sneak extra powerhouse ingredients into our kids so adding Mighty Maca to these cookies is a great way to get those added nutrients without the fuss.

Ingredients:

1 ripe banana

1 egg

1/3 cup tahini

1 tsp vanilla

1 tbsp melted coconut oil

3 TBSP date sugar (or coconut)

1/2 tsp baking soda

1/2 tsp baking powder

1/4 cup Mighty Maca superfood powder

3/4 cup almond flour

1/2 cup vegan chocolate chips

 To Make:

Preheat oven to 350.

Mash banana in a large bowl, then beat in the egg. Then stir in tahini, coconut oil, date sugar and vanilla. Once combined, add baking soda and baking powder and stir. Mix in flour and Mighty Maca superfood powder. Once combined, fold in chocolate chips. 

Scoop tablespoon size balls onto a cookie sheet covered with parchment paper and bake for 12-14 minutes.

** Not an actual recipe direction, but fun for little ones. Turn the oven light on and let your toddler watch the cookies bake. This is Jude's favourite part (aside from eating them)
